Sunnyside Campsite owner and baker Sally Bassett shares with us her favourite autumn recipe as part of our Suffolk Coast Chef's Autumn Collection.
Homemade cake is offered for sale by the slice, exclusively to guests here at Sunnyside Campsite, every Saturday throughout the camping season. I try to make something different each week and always look to what is seasonal for inspiration.
The harvesting of the wheat & barley from the vast arable fields that surround us, coincides with the ripening of the fruits and wild berries that are bountiful along our quiet Suffolk lanes and hedgerows, and this recipe is a real celebration of this special harvest time.
Bramble Cake
Ingredients:
350g softened butter or margarine
350g caster sugar
6 eggs
350g self raising flour
4 level tbsp blackberry jam
Lemon zest
2 tsp baking powder
Bug tub of clotted cream
Golden caster sugar to dredge
Makes 16 delicious slices.
Method:
- Grease & base line two 20cm sandwich tins.
- Sift flour with baking powder. Add softened butter/margarine and add to the flour along with the sugar & eggs. Beat thoroughly, using an electric mixer until smooth.
- Gently stir in lemon zest & and handful of blackberries with a wooden spoon or spatula.
- Divide the mixture evenly between the tins and level out. Bake in the oven at 190’C (375’F) mark 5 for about 30 minutes until sponges are well risen, firm to touch and beginning to shrink away from the sides of the tins. (Test by using a skewer in the centre and remove cakes from the oven when skewer comes out clean). Turn out and cool on a wire rack.
- When the cakes are completely cool, sandwich them together with a generous layering of clotted cream and then jam, sprinkle the top with caster sugar. Finish with a sprig of bramble flowers & berries to decorate.
Enjoy with a cup of tea and extra pouring cream if desired, or have with vanilla ice cream & extra berries for dessert.
